Becky Bakes

Oh. My. Goodness! If you have a hankering for something sweet, you’ll find an assortment of irresistible confections at Becky Bakes in New Ulm. The gourmet bakery is run by mother-daughter team Becky Waibel and Emily Atnip. The pair set up shop in September 2020.

“We both live here in New Ulm and we love our community,” Becky Waibel said. “We fell in love with our little brick building on Minnesota Street.”

The Becky Bakes menu includes gourmet cakes, cake pops, cookies, cookie sandwiches, and cheesecakes. Their filled cupcakes are customer favorites, with more than 30 flavors to choose from.

“Our cupcakes are one of a kind, and we are always coming up with new creations,” Emily Atnip said.

Other favorites include old-fashioned treats like peanut bars, apple pie bars, mock angel food, and pumpkin pie bars. They also have a great cookie lineup.

Waibel, the Becky in Becky Bakes, has always had a passion for baking. After 25 years with Pioneer Catering at Martin Luther College, she knows her way around a kitchen.


“I baked for people as a hobby,” Waibel said. “The demand was there for personalized and home-baked goods. With so many moms working, no one has time to do their own baking and New Ulm didn’t have anything like it.”

Word got out, and she frequently found herself filling baking requests for other people.

The idea of starting a bakery had always been at the back of Waibel’s mind. When her daughter moved back to New Ulm from Texas, the two decided to start a new business together.

“We have thoroughly enjoyed getting to work together,” Atnip said. “Neither of us would have ever thought of going into business with anyone else. We both have the same mindset, goals for the business, passion, and work ethics. We pride ourselves in the work that goes into each sweet treat.”

Becky Bakes’ treats are only available through preorders and pop-up sales. Keep an eye on their Facebook page for notifications.

“We love our random Saturday pop-ups,” Waibel said. “It is a day where we are not baking, and we get to chat and interact with our customers. Our customers are our favorite part of our job.
